WHAT IS FOOD ?

1. Food is essential to the nutrition of any human being or any form of life. If there is no food there is no life. If the amount or kind of food is inadequate, growth can be stopped and the capacity to work can be lost. The word "food" is used to anything edible. This word can be used to a natural product such as wheat, fish or potatoes, a partially processed product such as flour, or cooked foods such as an apple pie. If it is edible it is food regardless of what is to be done to it before it is eaten.

1. I'VE BEEN A MILK DRINKER ALL OF MY LIFE and I've never had a broken bone or cavity. I drank my milk because my Mom told me to, but I continue drinking my milk because I know that milk is the best source of calcium and calcium is vital to everyone's well - being.

2. A lack of calcium in our diets can lead to osteoporosis, the disease that makes bones weak and brittle (1) and prone (2) to fractures. We actually start to lose bone after we turn 35 and if we don't have a build-up of bone mass from our early years to start with, the bone deterioration (4) will occur more rapidly. What frightens me is that today experts find that less than 16 percent of teenage girls get even half of the required 1200 mg. of calcium.

PROTEINS.

1. The beginning of life on our planet is associated with the formation of proteins. This word means "to take first place", for there is no life without proteins. Usually these most essential of life's materials have the indefinite and glue - like form known as colloid. Proteins are found in foods of both animal and plant origin . Meat, eggs, milk, nuts and certain of cereal foods are high in protein. Proteins are composed of a number of amino acids linked together and also of amino acids linked with other substances. Certain amino acids the body is unable to build. These are known as essential and must be supplied by the foods eaten.

2. Gelatin is a protein substance that comes from the skins and bones of animals. Most people know it as the substance used to make a jellylike salad or dessert. Not only is it useful in making these foods, but it is also beneficial to the consumer because of its high protein content. Gelatin is also commonly used in the photographic industry and in making medicinal capsules.

3. The process for producing gelatin is a long and complex one. In the processing of gelatin made from bones, which varies slightly from that of gelatin made from skin, the grease first must be eliminated. Then, the bones are soaked in a solution of hydrochloric acid in order to rid them of minerals and are washed several times in water.

4. Next, the bones are placed in distilled water, heated to over 90°F for a few hours, placed in fresh distilled water, and then heated again at a little over 100°F. A fluid forms from this heating, and it is concentrated,

chilled, and sliced. Finally, it is dried and ground. In its final form, gelatin is white, tasteless, and odorless.

5. Most animal proteins are complete, plant proteins are incomplete. A complete protein is one that supports normal growth and maintains life. An incomplete protein is one that maintains life but does not support normal growth.
